Chickpea Salad

A delicious salad that will not disappoint. Chickpeas combined with juicy grape tomatoes and parsley, tossed in a tangy tahini dressing!

  • 1 cup cooked chickpeas
  • ½ cup grape tomatoes
  • 2 tbsp parsley leaves only
  • ½ tsp ground cumin
  • ½ tsp Aleppo pepper or to taste
  • ½ small pita cut into bite size squares and toasted
  • Salt to taste


  • ½ tbsp olive oil
  • 2 tbsp tahini
  • 4 tbsp lemon juice
  • Pinch salt


  • Whisk tahini, lemon juice and pinch of salt in a small bowl to make the dressing.
  • Combine the rest of the ingredients together, add the dressing and toss well.


If not planning to serve immediately, prepare the salad as above, but only add the bread right before serving.
