Fried Zucchini with Garlic Yogurt Sauce
Sweet Lebanese zucchinis and tangy yogurt garlic sauce with fresh mint on top, a light and a healthy meal that is packed with flavor!
- 4 – 5 medium Lebanese zucchinis
- 1 cup yogurt
- 1 small clove garlic minced
- fresh mint leaves to taste
- salt as needed
- vegetable oil for frying
Wash zucchinis and cut crosswise into ½ cm thick coins.
Heat oil and fry zucchinis for 3 mins or until lightly golden. Make sure you don’t burn them, as they brown very quickly.
Drain on paper towels.
Add a pinch of salt and the minced garlic clove to the yogurt and whisk until the yogurt is smooth.
Arrange zucchini on a plate, top with the yoghurt sauce and mint.
Serve with warm pita bread.
